What is a hamo from Awaji Island?

The seabed in the waters near Nushima is characterized by dolomite and soft sand, which allows the skin on the belly to grow thin and soft without abrasion. In addition, the Naruto Strait keeps the meat tight, and the fast currents on the seabed supply fresh water and an abundance of crustaceans and fish to feed on, resulting in delicious hamo that grow up to be meaty, rich in flavor, and colorful.

A collaboration nabe of our famous sea urchin shabu and hamo (garden eel) from Awaji Island. The hamo (conger eel) meat is lightly simmered in a rich sea urchin broth and melts in your mouth with the sweetness of the urchin. Finish with a bowl of "exquisite sea urchin porridge" that is richly infused with the flavor of the island's delicacies!

Awaji Island Hamo (Japanese conger eel) shabu-shabu course. We recommend the dish served with aromatic Sansho ponzu (Japanese pepper ponzu citrus sauce).

Finish off the meal with a dish of hamo no soborome-meshi with hamo shabu-dashi (hamo shabu soup stock) and chazuke (rice with green tea).

Hamo sukiyaki" is a local dish of Awaji Island, in which hamo (conger eel) is stewed with Awaji Island onions in a yose pot to bring out the flavor of the hamo (conger eel). The hamo is cooked with fresh island eggs and served with a variety of other dishes.

The dish ends with a delicious broth and Awaji Island hand-pulled somen noodles dipped in egg.
