Awaji Island Fresh Shirasu

Shirasu is a popular food that has been preserved by kama-ageing or sun-drying (chirimen) because it reeds quickly and is easily damaged. However, the fishermen of Iwaya have a passionate desire to let as many people as possible know that freshly caught raw shirasu has a superb appearance, texture, and taste. In 2011, after much trial and error by processors, chefs, and others, we finally developed a revolutionary method of preemptively freezing the fish immediately after landing at a nearby factory, keeping it fresh, and began selling it under the brand name "Awaji Island Fresh Shirasu". Only the freshest "Kireimon" (clean) shirasu from among the shirasu landed on Awaji Island can be called fresh shirasu, and only about 2% of the total amount of shirasu is fresh.
