もちろん味わえるのは今の季節だけ!さらに希少な生サワラを堪能できる逸品も取り揃えております！
淡路島のサワラの旬は、春から秋。秋のサワラは『寒鰆（かんさわら）』と呼ばれ、冬に向けて脂を蓄えたトロ顔負けの身は美食家をも唸らせています。またあまりにも足が早いといわれるのが「生サワラ」です。これまで漁師町の人々以外では食する機会がありませんでした。しかし新鮮な生サワラのおいしさをより多くの方に味わっていただきたいという想いから、当店ではオリジナルの生サワラメニューを開発しております。

新鮮な脂がのった、淡路島裏旬サワラの厚切りを贅沢に楽しめるすき鍋です。
まずは、淡路島産玉ねぎなどたっぷりの野菜とともに、島の放し飼い卵につけて濃厚な味わいをお楽しみください。お好みで梅干しを加えれば、さっぱりとした味わいにも変化します。
サワラの厚切りと酢〆は、お刺身としてもお召し上がりいただけます。ぜひこの機会に淡路島裏旬サワラをすき鍋とお刺身でご堪能ください。

秋のサワラは、冬にむけて身に脂を蓄え、中トロのような味わいになります。新鮮だからこそ生で味わえるサワラの厚切りたっぷり150gを、格子状にカットした鮮やかな花咲碗。
まずは特製醤油をかけ、サワラの脂としば漬けのサッパリした味をお召し上がりください。
最後に島たまごをかけていただくと、濃厚な味わいをお楽しみいただけます。

Hanasaki-don, a bowl of rice topped with a generous 150g thick slice of fresh Spanish mackerel, and chahan (rice cooked over rice) topped with rare Spanish mackerel chubu.
The vibrant Hanasaki-don is served with special soy sauce and thick island egg, while the Nakafoshi-don is served as chahan with special dashi broth. You can enjoy rare Awaji Island Spanish mackerel.

The head of Spanish mackerel, a rare part of the fish that is not easily found in the market, is boldly split open, sprinkled with salt, and grilled to perfection. The crispy, savory skin and fine-grained kama meat are inevitably addictive.
