Hamo-sukiyaki is a one-pot dish of hamo (conger eel) and Awaji Island onions simmered in a yosenabe-style broth, and is a specialty of Awaji Island. Hamo (Japanese conger eel), which is white and light in taste but plump and sweet with a touch of fat, and the sweetness characteristic of Awaji Island onions create an exquisite combination with the broth.
The hamo no sukiyaki is finished off with Awaji Island hand-pulled hamo somen noodles with egg and hamo somen noodles with egg.
