Today's dish is Awajishima hamo (hamo conger eel), a representative of Awaji Island's high quality foodstuffs.

The hamo shabu course is a superb menu item!

I would like to introduce "Hamo Shabu (pike conger eel shabu) with fresh sea urchin!

With a rich broth based on the best fresh sea urchin from Awaji Island,

Hamo no shabu course with fresh sea urchin.

First, dip the hamo into the sea urchin soup.

Please enjoy it by shabu-shabu until it becomes golden brown.

Shabu-shabu with raw sea urchin is also a luxury☆.

Finally, rice and condiments are added to the sea urchin soup,

The dish is finished with "excellent sea urchin porridge" full of flavor!

The red uni menu will be available until late September.
