A dish that wowed the judges!
In the "Creative Cooking Contest" for ideas of dishes using Awaji Island ingredients, the "Island Lemon Rice" created by our restaurant's Mr. Fujimi won the Grand Prize and was introduced in the Kobe Shimbun!

The key to making the best use of Awaji Island lemons is to remove the astringency by drying them once in order to bring out their best qualities! The lemon, Awaji Island ingredients such as salmon, sea bream, and rice are cooked together to create a refreshingly sweet rice dish that will fill your mouth!
