Black sea urchin caught in Awaji Island by open water fishing is in season from mid-October to mid-June. Its meat, which is fed on nutrient-rich seaweed, has a rich aroma of the sea and a very deep flavor!

Black sea urchins are freshly landed, so they are simply washed in salt water. No alum water is used for preservation.
