It combines "Bepin Hamo" (pike conger eel) and "superb fresh sea urchin," two of Awaji Island's most representative high-end ingredients,

This is a luxurious one-dish menu perfect for summer!

Next, I would like to introduce "2 kinds of selected fresh fish sashimi only available during the summer season!

 

The first one is "Aobera no Sagatsukuri".

Many people know the wrasse as a popular fish,

Depending on the time of year, it is also a high-end fish that commands a higher price than natural sea bream.

Bella has a strange biology in that she is all female when born and becomes male when she grows up!

The fat and sweetness of the fish are outstanding, and the rich flavor can be enjoyed even though the meat is white.

 

The second is "Isagi no Sagatsukuri" (sashimi with isaki mushrooms).

One Isaki lays as many as 1.28 million eggs, and the eggs hatch in one day.

In some areas, people pray with sardines to be blessed with a child, making it a fish of great luck!
