Awajishima Hand-pulled Soba Noodles: Soba Noodles from the Island
Awaji Island Soba noodles made using the hand-pulling technique that produces Awaji Island hand-pulled somen noodles.
By blending more wheat flour, the soba noodles are more elastic and smooth to the palate than handmade soba noodles, and they have a good thirst-quenching taste.
We propose such hand-pulled buckwheat noodles in two dishes at our restaurant.
Limited to 20 servings per day Island soba noodles with meat sauce 1,100 yen (tax not included)
The dish is made with a generous amount of sliced onion and chopped nori seaweed, making the soba noodles invisible! The Japanese-style soup stock, which contains the delicious flavors of bonito, kelp, and Awaji beef, is further enhanced by the addition of raayu (Chinese red chili oil). Please enjoy it with spicy thick tsuke-soba. Add the yolk of a "Kitasaka Tamago" (egg) on the way to change the taste!
Also served with "Kakiage (fried onion)".

Our special meat miso is arranged to be spicy. Try the spicy sauce with a hint of sansho (Japanese pepper).
If you break the egg yolk in the middle, the taste will be mellowed and you will enjoy a different flavor. Finally, try adding rice to the remaining broth to finish the dish in the style of ojiya (rice porridge).
