The restaurant uses many local ingredients, most notably the "Awaji Sawara no Chahan" (Awaji Sawara rice with green tea) made from the Sawara produced in Minami-Awaji City.
This menu item is a local dish that has been loved in Goshiki Town on Awaji Island for a long time, and is a rare way to eat it that you will not find elsewhere.
The way to eat it is not to put the mackerel on the rice as it is, but to put it on the hot rice with soy sauce and the chef's special soup stock, which can be served with ochazuke.
