Starting today, February 12, 2016 (Fri., Daian), you can enjoy the "fisherman's dish" of grilled abalone liver, which is served at the famous restaurant "Kaizan" in Sumoto, Awaji Island, at Uzuno-oka, a restaurant with a spectacular view.
The technique is taught directly by Masaaki Yamaga (a.k.a. Masa-san), one of the most skillful barewater fishermen in Yura, Awaji Island!
Fisherman's Cuisine - Abalone Liver Course 4,800 yen (excluding tax)
Fisherman's Cuisine Abalone Liver Roast is served as the main course at Sumoto's famous restaurant "Local Fish Cuisine Kaizan," run by Tadashi's son, Kosuke Yamaga, who is the general manager.
Chef Fujimi fell in love with this dish and asked Tadashi to teach it to our customers so that they could enjoy this fisherman's dish at our restaurant. We asked Tadashi to teach us how to prepare this fisherman's dish, and we are now able to sell it at our restaurant.

The more it is boiled down, the richer the abalone liver broth becomes, and the abalone and Yura's natural wakame seaweed are entwined to create an exquisite dish!
It is served as a course meal with abalone and three kinds of seasonal natural local fish, tempura of natural local fish and Yura's natural wakame seaweed, vinegared natural local fish for a small bowl, and dessert.
The final dish is the "abalone liver gunkan," a gunkan roll with nothing in it but abalone liver cooked until candy-colored and finished off with the "abalone liver gunkan.
We believe that it is essential for us to offer this fisherman's cuisine in our restaurant in order to pursue the "Awaji Island more Awaji Island.
